today I updated one instance from K2 to K3 and it was not as easy as I thought it would be. But of course it’s possible. But how long did I have time to update all sites to K3? Does K2 have a end of Lifetime?

You don’t have to update all K2 websites unless there’s a new K3 feature it would benefit from.
