as mentioned in the question’s title, is there a nifty way to add subdivide options of a Select field?

I asked this a while back, and the answer is basically no, but there is a potential work around for you in the the thread. There is no way that i know of to set option groups on a select field, and know what they relate to. basically u need set your groupings up as an array in the config and then pull them as described in this post.
What is your particular use case?
If you really want a select with optgroups, you could create a custom field.
