I’m wondering if I can make the panel login and also the password reset mail mutlilingual. I only found a way to set the default language in the guide.

According to the documentation, the default email text for password reset will be automatically picked based on the criteria outlined here: Login methods | Kirby CMS
The login screen will automatically use the default Panel language set in your config.
Based on your conditions for choosing a different Panel language (IP ranges or whatever), you could also put this setting into the ready option and make it conditional.
