Do you know what kind of future has Kirby 2 when PHP 7.4 support is ended (in 2 years)? I am asuming your testing environment would give much more reliable results regarding this, but just in general, is there a plan to extend support for php 8 with kirby 2 with an update, in the future (next year or so)?

Kirby 2 has reached end-of-life on January 1, 2021 and is therefore not supported by us anymore. This means that there will be no more updates, be it bug fixes, PHP version support updates or even security fixes. We strongly recommend to upgrade sites to Kirby 3. The upgrade price is heavily discounted.
To answer your original question: Kirby 2 does not and will not support PHP 8 because of the large set of deprecations and breaking-changes in PHP 8.
