I am using a layout setting (https://getkirby.com/docs/reference/panel/fields/layout#layout-settings) to allow the editor to set a background color for each layout (they pick from pre-defined options in a select field).
Is it possible to set the background color of the layout in the panel to reflect this?
Yes, via the layout fields settings property.

Yes that is the method I am using, but when it is set to a colour, I would like the layout to have that background colour when viewed in the panel. So the editor can easily see which layout has which background.
Oh, ok, you would have to overwrite the layout Vue template then, if that’s possible, not sure.
The Vue templates can be overwritten, and can be made to display a background colour quite easily 
Any chance you could provide an example of this?
