Hello,
I cloned plainkit locally, created a panel user and set a default language (en_US) via panel, and a secondary language (es_MX)
But that was a mistake as I want es_MX as default and en_US as secondary.
Now ¿how to change that? I cannot drag and drop, there is no ‘default’ setting, and if I edit the default language I cannot modify the ‘Code’ field which is greyed out and non editable.

Have you tried doing it manually in the languages files?
I did not, I understand I can do it by editing the files in site/languages and that afterwards I should manually change the language extension of all existing content files.
But I still would like to know if the described behaviour is expected, and if there is a panel way of doing this.
It just seems weird there is a panel way of setting the default language but not changing it. Could it perhaps be something about my config?

No, there isn’t. There was during the Alpha of Kirby 3 but this setting was removed because it meant you could loose all of your data. Even as it is, switching the default language after you have already filled in your content can mean a risk when you have lots of data only in the default language (using translate: false.
