Structure Field with textarea » excerpt in panel view via blueprint?

I have a structure field in my blueprint that fills a field with textarea.

When i now insert a long text there now it gets confusing in the panel, because it shows all of the text.

Is it possible to display only an excerpt in the kirby panel in a structure field via blueprint?

No, not natively, but if you use the snippet field you can:
