I deleted pages like “news”, “about” and “cv” and instead designed a new menu, only with “portfolio” and “contact” Why does it still appear in the google search and how can I change it?

Technically this is a Google issue:
Requesting removal of content from Google index
However, given time Google will eventually delist these now deleted pages.
You could also configure 301 redirects from your htaccess file to simply reroute the deleted URLs to the site pages of your choice.
